Observed wrapped hot dogs in upright reach-in cooler with an internal temperature of 56*F. According to PIC, shift smart employee had previously semi cooked hot dogs and moved to reach-in cooler to cool for service next day. Hot dogs were tightly wrapped in a bakery pan liner enclosed in plastic bin for more than 4 hours and were discarded at time of inspection. Discussed approved cooling methods with PIC.

Observed western omelet, sausage, eggs and cheese biscuit, ham, eggs cheese croissant, Italian Panini, Canadian bacon biscuit, brunch biscuit, sausage double, cheese and beer pretzel burger, Angus burger, pack of rib sandwich, beef cheeseburger, chicken and Swiss and ham and Swiss with an internal temperature of 56-60*F in the walk-in cooler. According to PIC, food had been previously frozen and thawed in the walk-in cooler for a day. All TCS foods were discarded at time of inspection

New food order will arrive on 7.31 and foods will be moved to freezer until repairs are completed and walk-in cooler is functional. Walk-in cooler must be repaired before 7.31.24.
