Observed a container with butter sitting out at 67 Deg. F. Butter is a Time Temperature Control for Safety Food (TCS) product that must be maintained at 41 Deg. F. or below or 135 Deg. F. or above. Per operator the product was only out for less then 2 hours, so it was placed back in the refrigerator at time of inspection. Suggest using time as microbial control policy if choosing to leave the product out at room temperature. Provided information on developing a time as control policy at the time of inspection.
