Inspector's notes

Observed sliced tomatoes in prep table on sandwich line measured to be 47°F by inspector's probe thermometer. Per PIC, tomatoes had only been in prep table for less than an hour. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. A look at the store's probe thermometer and temperature sheet showed the store's thermometer was improperly calibrated and showing fluctuating temperatures. Probe thermometer was also locked to show only Celsius, but the temperature sheet was written in Fahrenheit. Tomatoes improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed improperly calibrated thermometers on site at time of inspection. Using the ice-water test, 1st probe thermometer was showing temperatures 12°F below proper temperature. 2nd thermometer showed temperatures only in Celsius and fluctuated between -4°C and 2°C in ice water. Properly calibrated probe thermometers are required at all times for monitoring food temperatures. Must provide a properly calibrated probe thermometer for establishment prior to re-inspection. Corrective Action: Correct prior to re-inspection.
