Main walk-in cooler had the following TCS foods measuring an internal temperature of 48-50'F: macaroni and cheese, whole fruit bottled juices, various salad mixes, raw beef, raw pork, various shredded, sliced, and block cheeses, various deli lunch meats, cream cheese, soup, hummus, salsa, sliced tomato, potatoes, whole shell eggs, bagged eggs, coleslaw, heavy cream, and milk. Ambient air temperature of cooler measured 50.9'F with min/max thermometer. Per person in charge temperature of cooler had been verified to be properly cold holding upon arriving for the day <4 hours prior. On site maintenance was called and arrived to begin working on cooler. Staff began to remove TCS foods from walk-in and place into other working refrigeration elsewhere in kitchen. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Main walk-in cooler for food was holding TCS foods at 48-50’F. Ambient air temperature measured at 50.9’F with min/max thermometer. On site maintenance was called and began to work on cooler. After maintenance had finished working on cooler min/max thermometer was placed into unit again and showed no drop in ambient air temperature. Person in charge will have maintenance come out to work on cooler again. Do not store TCS food in walk-in cooler until it is able to hold them at 41’F or lower. Establishment has other adequate refrigeration and freezer in kitchen to be able to continue regular food preparation. Corrective Action: Correct prior to re-inspection.

Visit made to property to investigate possible preparation and/or serving of mixed drinks not within a permitted location. No signs of preparation/serving of drinks witnessed on the exterior of the facility at time of visit.Spoke with PIC, Donny A., (Food Operations Manager), at time of visit. Per PIC, approximately 10 days prior, a drink structure was in service in conjunction with their mobile food unit, The Tiny Tavern. Since that time, the drink structure has ceased operation, and currently the use of mobile food unit will also be out of service for the remainder of the year. Prior approval from this department will be required if facility wishes to handle open drinks (i.e. - ice and garnishes) when not in the permitted facility.Reviewed with PIC that food preparation and service must be in a permitted facility.No County legal action will result from this inspection.Emailed inspection report.

Large and deep plastic container of artichoke dip found in walk-in cooler with date marked 9/17-9/22. Dip has ice wand in it. Internal temperature of dip measured 52*F-61*F throughout container. When cooling, ensure that the food starting from 135°F reaches 70°F within 2 hours and reaches 41°F or less in 4 hours (for a total of 6 hours from the time it is 135°F to 41°F or less. Per PIC and date mark, artichoke dip failed to properly cool. Artichoke dip was embargoed (see embargo sheet). -------- PIC removed container of artichoke dip from walk-in cooler and discarded at time of inspection. Correct By: Corrected At Time Of Inspection
