With doors closed for 10-15 minutes, ambient temperature of reach in refrigerator was 42.1*F and 43*F, taken with inspector min/max thermometer. Discontinue use of dairy reach in refrigerator until able to maintain proper temperature throughout the day, especially during busier times of service.
