Observed employee wash and rinse used plate and utensils without sanitizing them at 3-compartment sink. PIC prepared chlorine sanitizer compartment and sanitized dishes at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Manual ware washing shall follow the three step procedure of wash, rinse, sanitize and then allowed to air dry. Corrective Action: Corrected at time of inspection.
