Observed employee wash and rinse used plate and utensils without sanitizing them at 3-compartment sink. PIC prepared chlorine sanitizer compartment and sanitized dishes at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Manual ware washing shall follow the three step procedure of wash, rinse, sanitize and then allowed to air dry.
