Inspector's notes

Observed TCS food being held in reach in cooler with warm ambient temperature. TCS food items include meat/cheese/cracker plates, meat/cheese sticks, yogurts, frozen burritos, cold sandwich's, and edible cookie dough. Ambient temperature taken with min/max thermometer registered 50*F. Internal temperature of TCS food items taken with internal probe thermometer registered 65-60*F. Per PIC food items were in unit for an unknown amount of time. All TCS foods improperly cold held were discarded by PIC at time of inspection. Equipment must be repaired to a state of good use and hold temperatures 41*F below before placing TCS food items in unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.
