#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed many TCS foods with internal temperatures ranging 48*F-53*F in the prep table in the kitchen. These TCS foods included pooled eggs, quiche, muenster cheese, pickled onions, dill sauce, and sliced baby tomatoes (see embargo sheet for remaining foods). The ambient air temperature of the unit was 55.9*F, measured using min/max thermometer. PIC stated that the TCS foods in the unit had been there since the morning (greater than four hours). Informed PIC that the foods need to be discarded. PIC discarded all TCS foods improperly cold held at time of inspection. Food was embargoed. Informed PIC that the unit cannot be used to store TCS foods until it is capable of holding them at 41*F or below. Discussed time as a control and ice bathing with PIC. PIC agreed to not use the unit until TCS foods can be held at 41*F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Physical facility must be maintained in good repair at all times.
