Observed 10 ppm of chlorine dispensed at dishwasher in bar area. PIC relocated all food-contact surfaces to 3 comp to be washed, rinsed, and sanitized at the time of inspection. Informed PIC that chlorine concentration must be maintained from 50 - 100 ppm. All warewashing must be take place at the 3-compartment sink until the dish washer is repaired. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed opened carton of pasteurized egg white with no date mark. Informed PIC that RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Per PIC the carton had been opened Sunday. All RTE/TCS foods were properly date marked at the time of inspection. Corrective Action: Corrected at time of inspection.
