Observed customer self service island open deli case holding the following items 48-55*F ham, cheddar, turkey, provolone, swiss, roast beef, pepperoni, salami, and colby jack. All items were dated 5/1-5/4. Walmart Coach in-charge did not have an indication if the food had been out of temperature for more or less than 4 hours. Corrective Action: Corrected at time of inspection.

Observed that sliced and packaged deli meats in the open top cooler had temperatures ranging from 46F-50F. All TCS foods must be kept at 41F or below. Meat products were stacked above the cooling unit capacity to maintain temperatures. Products that filled the maximum height for the cooler were in temperatures. The PIC moved the deli meats above the cold holding limit. Ensure coolers are not filled past there capacity for proper cooling. Review proper cold holding temperatures with employees.
