Inspector's notes

Observed large tray of marinated chicken measured to be 46*F by probe thermometer in reach-in fridge. Per PIC and label, chicken had been in reach-in fridge since day prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC disposed of out-of-temp chicken at time of inspection. Spoke to PIC about moving the rest of the TCS food that had been placed in reach in to other reach-in refrigerators until cooling issue could be addressed. Corrective Action: Corrected at time of inspection.

On cook line, sliced gyro meat with an internal temperature of 90*F-100*F. Per employee, gyro meat was sliced about 1.5 hours and was ready for service. Heat source was turned higher to re-heat gyro meat to 165*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above.
