Observed build up of black organic matter on inside of soda nozzles on server line. PIC stated nozzles are cleaned and soaked every night. Recommend scrubbing inside of nozzles with brush to prevent build up. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Correct prior to next routine inspection.

Bleach sanitizer in use in dish wash machine measured at 0 ppm although bleach sanitizer bucket is full. Temperature of dish washer is only reaching 120F with min/max thermometer. Per employee, dish washer is both high temp and chemical dish washer. Employee called for repair. Utilize 3 compartment sink until repaired. Discussed importance of testing bleach sanitizer for appropriate level of 75 ppm per manufacturer, and/or checking for appropriate high temperature of 160Fto insure appropriate sanitization of dishes and prevent foodborne illness.
