Observed beef tips and mashed potatoes in covered containers with a date stamp of 7/10 at 46*F. Cold hold of food to be 41*F or lower. As per the person in charge items have been stored in the walk in cooler since being prepared. Observed sliced tomatoes and chicken salad in prep cooler across from grill at 47*F. As per the person in charge the top portion had been open during breakfast. Cold hold of food to be 41*F or Lower Advised staff to verify cold hold temperatures throughout the day using their metal stem themometer. Item were embargoed and discrded

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. ---Prep table/cooler across from flat top grill had the following TCS foods measuring an internal temperature of 50-52'F. Leaf lettuce, shredded cheeses, slices cheeses, sliced tomato, mayo, sliced turkey, various sliced lunch meats, grilled onions, tuna, and sauerkraut. Per kitchen employee all food had been placed into prep table at beginning of day <4 hours prior. Ambient air temperature of cooler measured 55'F with min/max thermometer. Employee began to place all TCS foods into ice baths. Brought to attention of person in charge who contacted company to service cooler. TCS foods shall be held at 41'F or lower when cold holding.
