3-304.12 - Core: In-Use Utensils, Between-Use Storage Predefined Comment: In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed corned beef in cooling drawer at grill line at 44-45*F. Cold hold of food to be at 41*F or lower. As per thline cook, the corned beef was placed into the drawer the night before. Person in charge discarded the corned beef at time of the insoections. Advised staff to check food temperatures through out the day usine a metal stem thermometer. Corrective Action: Corrected at time of inspection.
