Observed cooked brown rice in the rice cooker in the dry storage area on the 'keep warm' setting at 67*F. Per PIC had been in the warmer since this morning at 10am. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. The PIC will use the rice cooker for cooking and not for warming. Corrective Action: Corrected at time of inspection.

Predefined Comment: RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection. Inspector embargoed food product. Predefined Comment: All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff, which resulted in the violation.

At pizza station prep table cooler, cut tomatoes/54*F and in back prep area, in two door reach in refrigerator, cut tomatoes/ 55*F cooling in covered containers. In walk in cooler, gazpacho/ 70*F cooling in covered container >4 inches deep. Cut tomatoes and gazpacho were moved to ice bath and cooked pasta was portioned in to shallow pans and moved to walk in freezer to continue the cooling process. Discussed proper cooling methods with managers. (A) Cooling shall be accomplished in accordance with the time and temperature criteria specified under § 3-501.14 by using one or more of the following methods based on the type of FOOD being cooled: (1) Placing the FOOD in shallow pans; (2) Separating the FOOD into smaller or thinner portions; (3)Using rapid cooling EQUIPMENT; (4) Stirring the FOOD in a container placed in an ice water bath; (5) Using containers that facilitate heat transfer; (6) Adding ice as an ingredient; or (7) Other effective methods. (B) When placed in cooling or cold holding EQUIPMENT, FOOD containers in which FOOD is being cooled shall be: (1) Arranged in the EQUIPMENT to provide maximum heat transfer through the container walls; and (2) Loosely covered, or uncovered if protected from overhead contamination, as specified under Subparagraph 3-305.11(A)(2), during the cooling period to facilitate heat transfer from the surface of the FOOD.
