Observed 0 ppm chlorine sanitizer in the back of house dish machine. Chlorine sanitizer should be between 50-100 ppm to ensure the dishes are properly sanitized. The machine was primed and still did not test. The PIC set up the 3-compartment sink to be used until a technician services the dish machine. Corrective Action: Corrected at time of inspection.

Observed shellstock tags stored on a clipboard, not in chronological order, and missing the last sold date. Shellstock tags must be kept with shellstock until sold, dated with final sale date, and maintained in chronological order for 90 days onsite. Shellstock batches should not comingle with other batches of shellstock. The PIC started to arrange the tags while inspector still onsite. Corrective Action: Corrected at time of inspection.

After empty bottle was exchanged for full bottle and machine was primed, and chlorine sanitizer with a concentration of 50-100ppm. After several attempts at chemical dispenser, repair company was called to repair dispenser. Establishment will hand measure quat sanitizer at 3-compartment sink and sanitizer buckets until chemical dispenser is repaired.
