#21 — Proper Hot Holding TemperaturesPriority3-501.16

Inspector's notes

Observed hamburgers and chicken sandwiches in hot holding unit with an internal temp of 103-110*F. Per PIC all food was cooked and assembled less than 2hrs prior to inspection. Hot holding unit had every rack filled with individually wrapped food items and was holding at 150*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection and relocated to another hot holding unit. Corrected at time of inspection.
