Observed milk, guacamole with tomatoes, sour cream, rice pudding, butter, cream cheese, and gelatina mosaico in walk-in cooler at 47-49 °F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed hard candy and tamarind candy being sold at the establishment that is produced by Enchila-2, permit number FD2404587. The labeling on the product did not include the processor address or phone number. The basic requirements for labeling on a food package include: name of product, processor name, processor address or phone number, ingredients and approximate weight. Discussed with PIC having the processor add their contact information to their food labels. Corrective Action: Correct prior to next routine inspection.
