Predefined Comment: Due to the violations noted on this inspection report, County legal action may result from this inspection.Predefined Comment: Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. A new walk-in freezer has been installed outside the rear entrance of the kitchen where no freezer had been before. The freezer was stocked with frozen TCS food items and was in working condition. Please submit an application, supporting documentation, and fees within 5 business days or legal action may result pursuant to MCEHC Chapter 1, Regulation 4(e). Applications with supporting documentation can be submitted via the customer portal "Permit Center" online at maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/homeDiscussed possible use of time as a control and minor facility maintenance
Inspector's notes
Lettuce, sliced tomatoes, and sour cream cold holding in refrigerated unit on server-side of cook-line found with internal temperatures of 46-52*F; temperatures verified with PIC's and inspector's probe thermometers. PIC stated the food items were placed in the cold holding unit yesterday and had not had their temperature checked since that time. PIC discarded the three food items. The cold holding unit will not be used for cold holding TCS food items. Alternate coolers are available to continue normal operations.
