Inspector's notes
Observed nacho cheese sauce reheating at 77 deg. F. at the hot holding table in the front. Observed several trays of French toast in the hot holding unit at 75-77 Deg. F. at the time of inspection. Per operator they were placed in the units approximately half an hour prior. Instructed operator that these units are designed to maintain food products at 135 Deg. F. or above, but any reheating must be done rapidly in the available ovens. The operator began reheating the items properly at the time of inspection. Corrective Action: Corrected at time of inspection.
