Establishment was observed operating outside the scope of their approved operating permit in violation of MCEHC Chap. 1, Reg. 4(a). PIC stated that outdoor food service including the preparation, cooking, and serving of open TCS foods occurs on Sundays from around 7am-8pm after the services. PIC stated that food is cooked at the kitchen or sometime prepared at the volunteer's home. The outdoor food service area is under a covered awning, and no hand sink is present. Discussed with PIC that open foods from home should not be sold. Discussed how to set up temporary hand sink with PIC. Discussed with PIC that these actions are operating outside the scope of their permit and they must apply for an outdoor cooking permit or discontinue/revise the current process. This is currently under review, will be in contact.

Observed vacuum sealed raw beef being stored over ready to eat foods such as cheese and milk in one of the standing coolers. No physical contamination observed. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.
