Inspector's notes

Observed several plastic bins at the clean dishes storage rack that were stored with water still trapped between the nested bins. The person in charge separated the wet dishes so they could finish air-drying prior to stacking them together. Discussed with person in charge to air-dry dishes prior to stacking them together. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Corrective Action: Corrected at time of inspection.
