Repeat Violation Observed 12 containers of blanched French fries sitting out in room temperature with an internal temperature of 80-110 °F. As per label and person in charge, fries were finished blanching at 11:15 am. Reviewed proper cooling times, temperatures and processes as well as how to check thermometer calibration using ice water at 32 °F. Instructed person in charge to place in walk in for proper cooling. These items were placed in the unit between 12:00pm-12:50pm, more than 4 hours prior to inspection. These items were recommended for discard, see embargo form. Reviewed cooling methods with the PIC to ensure foods made at ambient temperature can go from 70°F-41°F within 4 hours. Correct By: Corrected At Time Of Inspection

PRIORITY VIOLATION-5-202.11 (A), P: Approved System --At the mop sink, observed a garden hose attached to the faucet that was pressurized. PIC turned off the sink and disconnected the hose. Discussed with PIC the importance of keeping items disconnected from the mop sink when not in use to prevent possible plumbing issues. Correct By: Corrected At Time Of Inspection
