#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

The following food products were found with internal temperature range between 45-47*F while being cold held inside the walk-in cooler: Chicken strips (Spicy and regular), chicken patties (spicy and regular), sliced tomatoes, shredded cheese, cut lettuce, and egg rolls. Thermometers were calibrated at time of inspection. Per PC, all the products mentioned above had been inside the walk-in cooler overnight, other products were delivered in the early morning hours and were at proper temperatures. PIC stated that the walk-in cooler has been working on and off and they have a work order for repair. Per PIC, the service company is supposed to inspect and repair walk-in sometime today. Inspector will stop by later in the day to check the ambient temperature of the walk-in. At time of inspection, the ambient temperature of the walk-in cooler was 44*F according to inspectors' min/max thermometer and the refrigerator thermometer inside the walk-in cooler. It was unclear as to how long the food mentioned above was held within the temperature danger zone, therefore, PIC voluntarily discarded the food at time of inspection. Corrective Action: Corrected at time of inspection.

Both products were held under time as a public health control. PIC stated that products had been out for less than two hours and an adjusted time stamp was put on products. Reviewed with PIC that time stamps, whether using the digital timer or time stickers, must always be placed on TCS food items as soon as they are removed from refrigeration. Core-6-501.14, C: Cleaning Ventilation Systems, Nuisance and Discharge Prohibition ----- Observed excess build-up of grease dripping from the hood ventilation filters over the flat top grill. Per PIC, the ventilation filters are cleaned weekly. Advised PIC to clean filters at a frequency that doesn't allow buildup of grease to where it drips behind equipment. PIC stated that filters will be cleaned later today. Filters that collect particulate matter must be cleaned or changed frequently to prevent overloading of the filter.
