Inspector's notes
Observed circular and square baking pans in dry storage area with crumbs, oil, and food stuck in corners of square dishes. Person in charge stated dishes in dry storage area are clean. Discussed storing clean dishes away from dirty ones and ensuring staff are trained on washing dishes. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed grease accumulation on ventilation hoods above deep frier and oven. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Corrective Action: Correct prior to next routine inspection.

Observed accumulation of black debris on floor near walls in back of house. Observed liquid dripping on east wall in dry storage room. Grease on floor surrounding deep frier. Food debris build up on cabinet to food dies and food storage containers. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
