Inspector's notes

Observed circular and square baking pans in dry storage area with crumbs, oil, and food stuck in corners of square dishes. Person in charge stated dishes in dry storage area are clean. Discussed storing clean dishes away from dirty ones and ensuring staff are trained on washing dishes. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Food debris build up on cabinet to food dies and food storage containers. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
