No County legal action will result from this inspection.Upon re-inspection, all violations due for correction have been corrected.Establishment was able to present an invoice for services rendered on the main prep table located on the assembly line. The LCD display read 34'F, however, the min/max thermometer gave a reading of 41.8'F at time of inspection. Discussed proper cold-holding parameters with PIC. Ensure unit is routinely serviced as needed to retain temperatures of 41'F or below at all times. Also discussed freeing one well in the top portion of the prep table to allow for maximum airflow.

Observed cut tomatoes(51-53'F) and cut lettuce (55'F) being stored in the veggie display make table on the assembly line. Discussed proper cold holding parameters with PIC. Per PIC the cut tomatoes and lettuce were placed in the cooler about 30mins prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed veggie display make table being used to store cut tomatoes and cut lettuce (See Violation #22) while operating at 57.9'F via min/ma thermometer at time of inspection. Per PIC, the unit has been having issues maintaining required cold-holding temperatures for the past 2 weeks. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. A reinspection will occur on or prior to 8/12/2025 to verify the correction. Corrective Action: Correct prior to re-inspection.
