Reviewed with PIC about requirement for air gap between sprayer nozzle and basin on the 3-compartment sink at time of inspection. Corrective Action: Correct prior to re-inspection on 11/10. 5-205.15 (B) - Core: System Maintained in Good Repair; Maintained Addl Notes: Observed multiple leaks at the 3-compartment sink faucet at time of inspection. Must repair all plumbing to a state of good repair prior to next routine inspection. All plumbing must be maintained in good repair at all times. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed cut tomatoes, cut lettuce, cream cheese, hot dogs, cooked ground beef, and Swiss cheese in prep table with temperatures between 48 to 57*F at time of inspection. Per person in charge (PIC), cut lettuce and tomatoes had been placed in the prep table less than an hour prior to inspection and were moved to the walk-in to rapid cool. Per PIC, cream cheese, hot dogs, cooked ground beef, and Swiss cheese were all in the prep table from the day prior to inspection and were embargoed at time of inspection. Observed ambient temperature of the prep cooler at 53.7*F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
