Inspector's notes

Observed a container of Babybel Cheese and Cheese Sticks in back dry storage refrigeration unit with an internal temperature of 57F. PIC stated that both cheeses had been in the unit for over 24 hours. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Repair was in progress at the time of inspection and was able to reestablish drainage sufficient for hand washing and dishwashing with slow release, per technician, until clog can be completely cleared, scheduled for two days from today.
