Repeat Violation PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding.>>>Observed individually packaged cheesecake and individual containers of: flan, rice pudding, vanilla gelatin with milk, mixed fruit with gelatin, Mexican gelatin with milk, and individual packages of butter with internal temperatures of 46-53*F via probe thermometer in the open display cooler in the retail section of the facility. Probe thermometer was calibrated at time of inspection to ensure accuracy. Temperatures were reviewed with employee and person in charge. Person in charge (PIC) states all of the items were placed in the cooler the day prior to inspection. Explained to PIC that all time/temperature control for safety (TCS) foods must be at 41*F or below at all times Except during preparation, cooking, cooling, or when time is used as a control is used. PIC discarded of all items out of temperature for over 4 hours at time of inspection. The open display cooler measured 41.3*F via ambient thermometer. Explained to PIC the importance of not overfilling the open display cooler to allow maximum air flow to help keep items cool. Also recommended removing all perishable items from the open display cooler and placing in the other closed refrigeration units checked with inspector that have ambient temperatures of 41*F or below.
