A rack of raw longaniza was left out at ambient temperature to dry. It was measured at 80 degrees F after 1 hour of preparation. The longaniza was then put in the walk-in cooler to cool down and continue drying. Do not leave raw or cooked meats, sausages or pork bellies out at ambient temperature to dry. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-5-202.13, P: Backflow Prevention, Air Gap>>>Observed the condensation dispensing pipes of the meat display case and ice machine directly in the floor drains adjacent to both units at time of inspection. Explained to person in charge (PIC) the importance of keeping all water supply lines connected to units in the facility with an air gap that is at least an inch or greater from any floor drains to help with possible backflow contamination. An employee was able to adjust the water line pipes with temporary materials at least an inch above the floor drains for both the meat display case and the ice machine at time of inspection. Please make sure to fix permanently to avoid the water line falling back in directly to the floor drain. Correct By: Corrected At Time Of Inspection

PRIORITY VIOLATION-5-203.14, P: Backflow Prevention Device, When Required>>>Observed a hose with spay arm attached to a water heater without a proper backflow device in the back room at time of inspection. Explained to person in charge (PIC) that there must be an approved backflow prevention device when no airgap is present and because the hose is connected to a potable water source. PIC was able to disconnect the hose at time of inspection. Recommended using mop sink located at front of facility and sent PIC a copy of backflow device information informing them of the approved devices. Correct By: Corrected At Time Of Inspection
