Discussed that a CFM must be available at all time to answer food safety questions for employees. All food handler certificates have expired in 2020. PIC stated they are actively studying for the exam and will have a valid certificate in one week. Discussed retaining records onsite for CFM and employee food handler certificates. *Fifth repeat violation*Of note: Observed a small leak from the mop sink atmospheric vacuum breaker (AVB) when in use. Advised PIC to repair/replace or provide backflow certificates from a licensed plumber by the next routine inspection.
