#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

The foods (cooked vegetables, sprouts, cooked pork) in the cold holding reach cooler, across from the cook station had internal temperatures between 43*F-51*F using probe thermometer. Person in charge (PIC) stated the lid was up on the unit. PIC cooled food in alternate unit and closed the lid. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Containers of cooked foods (egg food young, cooked meat) did not have a date marking at time of inspection. Person in charge (PIC) stated they were made yesterday. Discussed date-marking procedures. PIC put a date on the containers at time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods were properly date marked at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed pooled eggs in a container and bean sprouts in a container across from cook station in ambient air temperature (63*F-65*F with probe thermometer) that did not have a time stamp. Person in charge (PIC) stated they keep them out during the lunch rush. Discussed proper time as a control for safety procedures. PIC put a time stamp on the food at time of inspection. All TCS foods being held under time as a control were properly time stamped at time of inspection.
