Cooked brisket stored under raw beef items in the walk in cooler. *All raw items were stored in containers and the brisket was covered. PIC relocated the brisket to proper location. Ensure that food items are protected from cross contamination during storage, preparation, display. Corrective Action: Corrected at time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown which resulted in the violation.

Observed inside main hot wells for AL/Independent full right side pan cover yet not touching hot water inside had side three large pieces of cooked chicken with internal temperature of 122*F-127*F with inspector thermometer. Notified Person In Charge (PIC). Per PIC the cooked chicken was recently placed into unit 20 minutes prior to inspection start time. Directed PIC to have employees reheat to 165*F. Verified after 20 minutes. ====Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher. Corrective Action: Corrected at time of inspection.
