Spill proof vacuum breaker must be tested/certified and installed at least 12 inches about outlet. Also observed water connected iced tea machine in beverage preparation area without backflow device. This is a follow up advisory visit after liaison training, walked through the establishment and observed employees' activities in the establishment. All violations observed in previous inspections were corrected and not observed at time of inspection. Kitchen manager and employees talked during the inspection have the knowledge of cross contamination, temperature danger zone and personal hygiene. The establishment discontinue to re-use soy bean sauce buckets and purchased reusable food grade buckets. Drying rackets were purchased for air dry of utensils and containers. Raw animal food prepare station is separated from other stations. No cold holding and Hot holding violation observed at time of inspection. Discussed how to follow the time as a control policy of sushi station and educated owner to clean and sanitize all food contact surfaces at sushi station every 4 hours.Notified ERI inspector of this advisory visit.No County legal action will result from this inspection.Inspection report provided to manager via email.
