Discussed repairing any holes, gaps, deteriorating areas etc. Equipment surfaces must be surfaces must be smooth, non-absorbent, free from cracks/crevices, and easily cleanable. Inspector's notes

Observed several cracked floor tiles and missing grout in areas of the kitchen such as near the 3-compartment sink and by the exit door. Discussed repairing the tile and grout to deter pests and pathogen growth. Smooth and easily cleanable surfaces will prevent soil/water pooling and eliminates voids which could attract pests such as insects and rodents or contribute to problems with certain pathogens such as Listeria. Corrective Action: Correct prior to next routine inspection.

Directed PIC to place foods listed into main walk in unit to cool to 41*F. Verified after 30 minutes. ========= Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
