Inspector's notes
Observed cooked chicken in the reach-in fridge at the cookline prep table measured to be 47°F by probe thermometer. According to the date marking, chicken had been in the reach-in since 5/10. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC disposed of the chicken at the time of inspection. Corrective Action: Corrected at time of inspection.
