Observed the walk in cooler used to store eggs and cows milk having an ambient temperature of 45*F using min/max thermometer. Person in charge states they have a technician on their way to fix the unit. Cows milk had just arrived 1 hour prior to the inspection and were relocated to a functional cold holding unit. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Reinspection will occur within 24 hours. Corrective Action: Correct prior to re-inspection.

Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment --- Observed secondary walk-in cooler inside the main walk-in unit at ambient temperature of 54.8'F. PIC stated the unit was observed out of temperature at 2:00am and the inventory was moved into the main walk-in unit within the hour. The main unit holds a temperature of 40.4'F. The secondary walk-in was empty at the time of inspection. No TCS foods were stored in the unit per PIC. The establishment has adequate storage and equipment. to continue normal operation. Cold holding units must hold temperature at 41'F or below. PIC was instructed to have the unit fixed prior to next routine inspection. Discussed with PIC to continue using main walk-in unit and smaller walk-in unit on the other side of the establishment to support adequate storage; and to continue refraining from using the faulty unit until it has been fixed.
