-- Chlorine concentration undetectable on dishes in low temp sanitizing dishwasher. Reviewed the required specifications of 50ppm-100ppm with the PIC. Dishwasher unable to be repaired after priming at the time of inspection. The person in charge (PIC) stated they will use main kitchen to wash, rinse, and sanitize dishes. Requested an "Out of Order" sign be placed on equipment until repairs are completed at the time of inspection. Please ensure employee are utilizing test strips to verify dishes are getting properly cleaned and sanitized. Corrective Action: Corrected at time of inspection.

This establishment is not participating in the award program at this time and had 2 Priority, 0 Priority Foundation violations on this inspection.Observed the establishment operating above the scope of their approved permit. Observed a flattop being used in the hallway (outside of the permitted room) to cook eggs and pancakes as well as a portable coffee cart. Additionally, no handwash sinks were in vacinity. Person in charge states they usually don't do this kind of operation and is only done when the opposing baseball team requests it. Person in charge stopped this operation at the time of inspection. Establishment must only operate within the approved permit class and within the permitted establishment.
