-- In prep top refrigerator, multiple containers of guacamole with diced tomatoes had internal temperatures ranging from 48°F-53°F using probing thermometer. All other TCS items in unit were cold holding at 41°F or less. The person in charge (PIC) stated the guacamole containers were removed from the walk-in refrigerator and placed in the prep top cooler around 11:00 AM this morning. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
