Observed handwashing sink by walk-in cooler without a handwashing sign. Person in Charge (PIC) was notified that a sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees and shall be clearly visible to food employees. Observed red organic matter in the dispensing nozzles of the soda dispensing station behind service counter. Notified the PIC and spoke about an increase in cleaning frequency for the nozzles to prevent build up of any food debris or organic matter. Observed Sanitizer Bucket behind front counter with Chlorine over 200ppm. Sanitizer was remade by PIC and retested at a proper levels of 50ppm - 100ppm. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions. Corrective Action: Corrected at time of inspection.

Observed raw in shell eggs above RTE foods like soup, sauces and noodles and vegetables like lettuce and thai basil in refrigerator located back of house. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.
