In two door reach in freezer, >5 packages of raw meat stored in reduced oxygen packaging. On packaging, only date noted. Instructed manager to open all packages of reduced oxygen packaged raw meat. Discontinue all reduced oxygen packaging of TCS foods until a variance is obtained. Via email, provided weblink on obtaining a variance for reduced oxygen packaging. A variance/HACCP is to be obtained prior to conducting any specialized processes. At in use 3-compartment sink, at dishware surfaces soaking in solution, quat sanitizer with a concentration of 0ppm. After several attempts to adjust concentration, quat sanitizer was made to about 200ppm. Discussed more frequent monitoring of sanitizer solution, especially when prepared and after heavy warewashing. Per employee, sanitizer solution was just prepared. Recommended purchasing a new pump for sanitizer bottle to ensure proper dispensing. Corrective Action: Corrected at time of inspection. 4-601.11(A) - Priority Foundation: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils. Establishment uses a high temperature sanitizing warewashing machine for dishware cleaning. Establishment does not have a thermometer for monitoring final high temperature rinse of warewashing machine. Sanitizing using high temperature warewashing machines requires an irreversible waterproof measuring device to ensure food contact surfaces reach 160°F. Provide approved irreversible measuring device prior to re-inspection. Corrective Action: Correct prior to re-inspection.
