Per employee, pizzas are delivered and either sold or discarded after 4 hours. Ambient temperature of hot holding units were 145*F. Manager adjusted ambient temperatures higher to rapidly re-heat pizza slices. Recommended using time as a public health control for pizza slices. A time control procedure was written at time of inspection for future use with hot holding items.
