Observed numerous time-and-temperature control for safety (TCS) foods, such as sliced cheeses, salsa rojo, and guacamole with diced tomato, with internal temperatures ranging from 49-60 degrees Fahrenheit. All items were located in a prep-style refrigerator that was not holding cold. TCS foods shall be held cold at 41F or colder. Per person in charge (PIC), all items were placed in unit less than 4 hours prior to inspection. PIC moved items to walk-in refrigerator and restocked unit, placing new items on 4 Hour Time as Control following existing policies. Corrective Action: Corrected at time of inspection.
