Observed butter sitting in on table next to prep table in kitchen at 78 Deg. F., per PIC butter was removed from temperature control two hours prior. Discussed with PIC that butter is considered a TCS food item and needs to be held under temperature or time control. Butter was placed in fridge to cool. *Discussed with PIC that butter can be placed on time as control however a policy needs to be made and approved by department prior to use.
