All unnecessary items must be removed from establishment to prevent attraction of pests. Corrective Action: Correct prior to next routine inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Calibrated thermometer with person in charge (PIC). Observed multiple TCS items such as milk, cheese, yogurt, deli meats, cut leafy greens, and cooked beans with internal temperatures ranging between 46°F and 50°F in walk-in cooler. Ambient air temperature of walk-in cooler measured 47°F at time of inspection. Per PIC walk-in cooler has been down for the past 3 weeks or so and the ambient air temperature ranges between 41°F and 49°F. PIC could not verify how long TCS food items were out of proper cold holding temperatures. TCS food items were discarded at time of inspection. A service tech was called to fix walk-in cooler at time of inspection. Ambient air temperature of walk-in unit measured 39° at end of inspection. Discussed cold holding policies and procedures.
