Observed buildup of brown organic matter on soda nozzles at soda station. All food-contact surfaces must be cleaned to sight and touch. PIC states soda and ice machine is disassembled and cleaned once a week. Discussed with PIC that all food contact surfaces must be washed, rinsed, and sanitized and in a manner that precludes the buildup of organic matter. Repeat violation: 2nd Consecutive. Corrective Action: Correct prior to next routine inspection.

Discussed with PIC that a remodel application and plans may need to be submitted. Guidance on submitting a remodel application was sent to PIC via email. Applications with supporting documentation can be submitted via the customer portal "Permit Center" online at maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.
Inspector's notes
Observed employee take soap from next door kitchen area and wash hands in dump sink at front counter. Employee states soap dispenser at handsink by front counter is not working. Person-in-charge (PIC) had batteries to soap dispenser replaced, and soap was provided to handsink at time of inspection. Employee properly washed hands at handsink at time of inspection. Employees must wash hands in an approved handwash sink to ensure contamination from hands does not spread to utensils/items coming in contact with prep sink. Also discussed with PIC that all handsinks must be stocked with a handwashing cleanser, an approved drying provision, and hot water of at least 100*F. Corrective Action: Corrected at time of inspection.

Observed precooked penne pasta with an opened date of 12/30 on the box. It was determined that staff were using the wrong shelf life for the product. RTE (ready to eat)/TCS (time/temperature controlled for safety) foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Discussed with employees measuring the concentration of the sanitizer every time it is prepared to ensure it is between 50 - 100 ppm.
