Observed employee at 3 compartment sink wash and rinse metal sheet tray and then dip into sanatizer bay. Asked PIC to test the chlorine sanitizer levels and found it to be less than 50ppm. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Sanitizer solution was re-made with proper quat concentration and the metal sheet pan was re-sanitized a time of inspection. Corrective Action: Corrected at time of inspection.

Observed ventilation system on the main cook line with grease buildup forming above the flat top grill, showing signs of drippage. Also observed the caulking to be separating and flaking off. Discussed with Person in Charge (PIC) the fixed parts of the ventilation system shall be sealed with high temperature caulking to create a smooth and easily cleanable surface to prevent accumulation of grease buildup causing dripping over time. Also discussed to have the ventilation cleaned at a frequency to prevent buildup of grease. Corrective Action: Correct prior to next routine inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. >>>Observed Reach-in refrigerator to the left of the three compartment sink at an ambient temperature of 48*F. Per Person in Charge (PIC) the temperature control for safety (TCS) items were chopped kale, chopped cabbage and shredded jack cheese at temperatures of 49*F to 50*F were in the unit for more than 4 hours. Embargoed the TCS items and PIC discarded at time of inspection. Per PIC, the TCS items in unit for less than four hours were chopped romaine, spring mix, homemade ranch, homemade jalapeno cilantro ranch and marinara, ranging at 48*F to 52*F, were relocated to adequate refrigeration to rapidly cool. Discussed proper cold holding and proper food storage in the refrigerator to allow for adequate air flow. All TCS foods held cold must be held at 41'F or below at all times. Discussed with PIC to have unit fixed and once the internal ambient temperature reaches 41*F or less then it can be used again. Correct By: Corrected At Time Of Inspection
