Observed pans of cooked chicken in walk- in cooler. PIC said some of the chicken was cooked in the morning and other pans of cooked chicken were cooked yesterday. Notified PIC RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). PIC wrote datemarks on all containers of chicken in the walk-in cooler. Corrective Action: Corrected at time of inspection.

Observed short metal pan, wet stacked in the clean dish storage area. PIC moved dishes to the 3 compartment sink to be washed. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Corrective Action: Corrected at time of inspection.

No County legal action will result from this inspection.Of Note: Discussed with PIC when washing hands proper procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination.

Observed in the back large bins of grains with the scoop stored in the product and the handle was buried under the surface. Discussed with the person in charge (PIC) In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

Discussed the requirement that all cleaned dishes must be air dried. The PIC moved the wet stacked dishes to allow for air drying. Correct By: Correct Prior To Next Routine Inspection
Core-6-303.11, C: Intensity-Lighting ------- Observed a dim light installed in the corner of the walk in cooler so all areas of the unit were not fully illuminated. Ensure there is at least 108 lux (10 foot candles) inside walk in coolers. Advised PIC to replaced bulb with one bright enough to illuminate all areas of the walk in to allow for proper cleaning.
