Observed scratched and scored cutting surfaces which are not in good repair or easily cleanable. Discussed cutting surface characteristic requirements with PIC. All food-contact surfaces must be smooth, durable, non-absorbent, and easily cleanable. Corrective Action: Correct prior to next routine inspection. PRIORITY VIOLATION-4-101.11 (A) - Priority: Characteristics- Multiuse; Safe Addl Notes: Observed manual citrus juicer coated in a layer of yellow paint that was actively chipping and falling off where the citrus is placed. Instructed PIC to discard and use stainless steel manual citrus juicers. Materials that are used in the construction of utensils and food-contact surfaces of equipment may not allow the migration of harmful materials that can enter into a food product. Corrective Action: Corrected at time of inspection.
