Inspector's notes

Observed an employee wrapping cheeses adjust their glasses and hair covering with gloved hands and return to wrapping cheeses. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. PIC had the cheese discarded at the time of inspection. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed the cheese bunker cooling with various packaged TCS cheeses holding at 60*F. Per PIC, proper cold holding temperatures were recorded less than 4 hours prior. PIC provided cold logs. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed an employee actively packaging cheeses without an effect facial hair restraint. Food employees shall wear hair restraints such as hats, hair coverings or nets, beard restraints, or other effective hair restraints and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food; clean equipment, utensils, and linens; and unwrapped single service and single-use articles. PIC instructed the employee to don a beard restraint at the time of inspection. Corrective Action: Corrected at time of inspection.
